Keto Paleo Chicken Fritters

Ingredients

  • 1 tbsp olive oil
  • 2 boneless skinless chicken breasts ((500g))
  • 2 clove garlic
  • 1 tbsp rosemary
  • 1 tbsp sage
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 red onion
  • 2 tbsp mayonnaise
  • 2 tbsp blanched almond flour
  • 1 tsp unsweetened almond milk
  • 1/2 tsp lemon juice

Instructions

  1. Mince the red onion, garlic and rosemary.
  2. Mix all of the dipping sauce ingredients in a small bowl.
  3. Chicken Fritters Dice your chicken breasts and add it to a bowl.

  5. Mince the garlic.
  6. Thinly slice the red onions.
  7. Add all of the chicken fritters ingredients in the bowl.

  9. Mix everything thoroughly until it's a bit pasty.

  11. Heat the olive oil on medium heat in a large skillet.
  12. With a 1/4 measuring cup, scoop the chicken batter and gently place onto the frying pan forming a small 10cm circle.
  13. Repeat this step with the rest of the batter.
  14. You should have 8 fritters.

  16. Place the lid on the pan and fry for 2-3 minutes.
  17. Remove the lid and CAREFULLY flip the fritters.

  19. Cover with the lid once more and cook for 1-2 more minutes.
  20. Take off the heat and serve with the yummy dipping sauce!
  21. Recipe Notes *Because these fritters do not have any cheese in them, they tend to break apart easily when you flip them, so carefully flip them over!
