Ingredients
- 1 lb shrimp ((deveined and peeled, About 21-25 shrimp))
- 2 eggs (beaten)
- 1 1/2 cup unsweetened shredded dried coconut ((deveined and peeled, About 21-25 shrimp))
- 1/2 tsp salt
- 1/2 cup coconut flour ((deveined and peeled, About 21-25 shrimp))
- coconut oil ((deveined and peeled, About 21-25 shrimp))
- 1/2 cup mayonnaise
- 1 tbsp sriracha sauce
- 2 tsp rice vinegar
- 3 tbsp apricot preserves ((deveined and peeled, About 21-25 shrimp))
- 2 tsp lime juice
- 1/4 tsp crushed red pepper
Instructions
- In a small bowl mix the salt and coconut flour Create and assembly line of three bowls, one with the flour mixture, the second with the eggs and the third with the unsweetened shredded Coconut Dredge the shrimp in the flour mixture, then in the egg and finally in the shredded coconut until well coated Fill a saute pan about 2 inches with coconut oil and put on medium high heat Once the oil is hot place shrimp in oil and cook 1-2 minutes on each side.
