Ingredients

  • 2 eggs (beaten)
  • 1 1/2 cups unsweetened shredded dried coconut (deveined and peeled, About 21-25 shrimp)
  • 1/2 teaspoon salt
  • 1/2 cup coconut flour (deveined and peeled, About 21-25 shrimp)
  • coconut oil (deveined and peeled, About 21-25 shrimp)
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 2 teaspoons rice vinegar
  • 3 tablespoons apricot preserves (deveined and peeled, About 21-25 shrimp)
  • 2 teaspoons lime juice
  • 1/4 teaspoon crushed red pepper

Instructions
