Ingredients

  • 1 lb ground beef ((80/20))
  • 1/4 cup almond flour
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp worchestershire
  • 2 tbsp butter ((80/20))
  • 2 cup sliced mushrooms ((80/20))
  • 1 cup onions ((80/20))
  • 1 clove garlic ((80/20))
  • 1 1/2 cup beef broth
  • 3/4 cup sour cream
  • 1/4 tsp xanthan gum
  • 2 tbsp fresh parsley ((80/20))

Instructions

  1. In a large bowl, combine the ground beef, almond flour, salt, pepper, garlic powder, onion powder, dried parsley, and Worcestershire sauce. Mix until just combined.
  2. Form the mixture into small meatballs, about 1 inch in diameter.
  3. Melt the butter in a large skillet over medium-high heat and brown the meatballs on all sides, about 6-8 minutes. Remove and set aside.
  4. In the same skillet, sauté the sliced mushrooms, onions, and minced garlic until softened, about 5 minutes.
  5. Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom.
  6. Return the meatballs to the skillet and simmer for 10 minutes until cooked through.
  7. Remove from heat and stir in the sour cream and xanthan gum until the sauce is thick and creamy.
  8. Garnish with fresh parsley and serve.
