Ingredients
- 1 lb ground beef ((80/20))
- 1/4 cup almond flour
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried parsley
- 1 tsp worchestershire
- 2 tbsp butter ((80/20))
- 2 cup sliced mushrooms ((80/20))
- 1 cup onions ((80/20))
- 1 clove garlic ((80/20))
- 1 1/2 cup beef broth
- 3/4 cup sour cream
- 1/4 tsp xanthan gum
- 2 tbsp fresh parsley ((80/20))
Instructions
- In a large bowl, combine the ground beef, almond flour, salt, pepper, garlic powder, onion powder, dried parsley, and Worcestershire sauce. Mix until just combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Melt the butter in a large skillet over medium-high heat and brown the meatballs on all sides, about 6-8 minutes. Remove and set aside.
- In the same skillet, sauté the sliced mushrooms, onions, and minced garlic until softened, about 5 minutes.
- Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom.
- Return the meatballs to the skillet and simmer for 10 minutes until cooked through.
- Remove from heat and stir in the sour cream and xanthan gum until the sauce is thick and creamy.
- Garnish with fresh parsley and serve.
