Ingredients

  • 1/2 cup creamy peanut butter ((Crazy Richard’s))
  • 1/2 cup mascarpone
  • 1/2 cup unsalted butter ((Crazy Richard’s))
  • 2 tbsp Swerve Sweetener (confectioners)
  • 3 oz dark chocolate ((Crazy Richard’s))
  • 1 tbsp organic coconut oil

Instructions

  1. Preparation Add the Crazy Richard's peanut butter, mascarpone cheese and butter to a microwave safe cup and melt in the microwave for 15 seconds.
  2.  Stir in the swerve confectioners, then microwave for an additional 10-15 seconds, or until melted.
  3.  Whisk to combine.
  4. Separate out 3/4 cup of the mixture and set aside for the top layer.
  5.  Pour the mixture into silicone molds 1/3 of the way up.
  6.  Put in the freezer for 10 minutes, or until set.
  7. Add the Lily's chocolate and coconut oil to a microwave safe cup and melt in the microwave.
  8.  Stir until well combined, then pour another 1/3 of the way up the molds.
  9.  Freeze for another 10 minutes, or until set.
  10. Pour the remaining peanut butter mixture over the top and freeze for 15-20 minutes or until firm.
  11. Store in the fridge or freezer.
