Inside Out Peanut Butter Cup Squares – Keto and Low Carb

Ingredients

  • 1/2 cup creamy peanut butter (Crazy Richard’s)
  • 1/2 cup mascarpone
  • 1/2 cup unsalted butter (Crazy Richard’s)
  • 2 tablespoons Swerve Sweetener (confectioners)
  • 3 ounces dark chocolate (Crazy Richard’s)
  • 1 tablespoon organic coconut oil
  • 1/2 cup creamy peanut butter (Crazy Richard’s)
  • 1/2 cup mascarpone
  • 1/2 cup unsalted butter (Crazy Richard’s)
  • 2 tablespoons Swerve Sweetener (confectioners)
  • 3 ounces dark chocolate (Crazy Richard’s)
  • 1 tablespoon organic coconut oil

Instructions

  • Preparation Add the Crazy Richard's peanut butter, mascarpone cheese and butter to a microwave safe cup and melt in the microwave for 15 seconds.
  •  Stir in the swerve confectioners, then microwave for an additional 10-15 seconds, or until melted.
  •  Whisk to combine.
  • Separate out 3/4 cup of the mixture and set aside for the top layer.
  •  Pour the mixture into silicone molds 1/3 of the way up.
  •  Put in the freezer for 10 minutes, or until set.
  • Add the Lily's chocolate and coconut oil to a microwave safe cup and melt in the microwave.
  •  Stir until well combined, then pour another 1/3 of the way up the molds.
  •  Freeze for another 10 minutes, or until set.
  • Pour the remaining peanut butter mixture over the top and freeze for 15-20 minutes or until firm.
  • Store in the fridge or freezer.
