Gluten Free & Keto Salmon Tzatziki with Cucumber Noodles

Ingredients

  • 140 grams greek yogurt
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 2 cloves garlic (grated or ran through a press)
  • 1 teaspoon fresh dill (grated or ran through a press)
  • kosher salt (grated or ran through a press)
  • 1 cucumber (spiralized or grated)
  • 2 salmon fillets (grated or ran through a press)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon grated lemon zest (grated or ran through a press)
  • 2 cloves garlic (grated or ran through a press)
  • freshly ground pepper (grated or ran through a press)

Instructions

  • For the tzatziki sauce:In a medium bowl combine yogurt, olive oil, vinegar, lemon juice, garlic, dill and season to taste.
  • If grating the cucumber add it in, if spiralizing it leave it out.
  • Refrigerate covered until needed.
