Gluten Free & Keto Salmon Tzatziki with Cucumber Noodles

Ingredients
- 140 grams greek yogurt
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon lemon juice
- 2 cloves garlic (grated or ran through a press)
- 1 teaspoon fresh dill (grated or ran through a press)
- kosher salt (grated or ran through a press)
- 1 cucumber (spiralized or grated)
- 2 salmon fillets (grated or ran through a press)
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon grated lemon zest (grated or ran through a press)
- 2 cloves garlic (grated or ran through a press)
- freshly ground pepper (grated or ran through a press)
Instructions
- For the tzatziki sauce:In a medium bowl combine yogurt, olive oil, vinegar, lemon juice, garlic, dill and season to taste.
- If grating the cucumber add it in, if spiralizing it leave it out.
- Refrigerate covered until needed.
