Ingredients

  • 1 head cauliflower ((Riced))
  • 1 1/2 cup shredded cheddar cheese
  • 3 large eggs
  • 2 tsp paprika
  • 1 tsp turmeric
  • 3/4 tsp rosemary

Instructions

  1. Rice the cauliflower using a food processor or box grater.
  2. Microwave or steam the riced cauliflower for 3-4 minutes until tender. Squeeze out excess moisture using a clean towel.
  3. In a large bowl, combine the cauliflower rice, 1 cup of shredded cheddar, 2 eggs, paprika, turmeric, and rosemary. Mix well.
  4. Spread the mixture into a parchment-lined baking dish and refrigerate for 30 minutes to firm up.
  5. Cut into small squares or rectangles.
  6. Beat the remaining egg in a shallow dish. Heat oil in a skillet over medium-high heat.
  7. Dip each piece in egg, then fry for 2-3 minutes per side until golden and crispy.
  8. Top with remaining shredded cheddar while hot and serve.
