Fried Mac and Cheese

Ingredients
- 1 head cauliflower ((Riced))
- 1 1/2 cup shredded cheddar cheese
- 3 large eggs
- 2 tsp paprika
- 1 tsp turmeric
- 3/4 tsp rosemary
Instructions
- Rice the cauliflower using a food processor or box grater.
- Microwave or steam the riced cauliflower for 3-4 minutes until tender. Squeeze out excess moisture using a clean towel.
- In a large bowl, combine the cauliflower rice, 1 cup of shredded cheddar, 2 eggs, paprika, turmeric, and rosemary. Mix well.
- Spread the mixture into a parchment-lined baking dish and refrigerate for 30 minutes to firm up.
- Cut into small squares or rectangles.
- Beat the remaining egg in a shallow dish. Heat oil in a skillet over medium-high heat.
- Dip each piece in egg, then fry for 2-3 minutes per side until golden and crispy.
- Top with remaining shredded cheddar while hot and serve.
