Easy Breakfast Baked Egg in Avocado Recipe [Paleo, Keto]

Ingredients

  • 2 egg yolks
  • 2 tsp olive oil ((or coconut oil))

Instructions

  1. Preheat oven to 400 F (200 C).
  2. Slice the avocado in half and remove the stone.
  3. Crack the 2 eggs into a bowl.
  4. Scoop out each egg yolk and place each into an avocado half.
  5. Pour 1 teaspoon of olive oil onto each egg yolk in the avocado.
  6. Bake for 12 minutes.
  7. Sprinkle salt and pepper and whatever additional herbs and spices you’d like on top.
