Delicious Low Carb, Ketogenic Three Cheese Pie

Ingredients

  • 2 cup almond flour
  • 1 oz unsalted butter ((softened))
  • 1 oz cream cheese ((softened))
  • 1 tbsp heavy cream
  • 7 oz feta cheese ((softened))
  • 8 oz ricotta cheese ((softened))
  • 5 oz gruyere cheese ((softened))
  • 2 tbsp rosemary ((softened))
  • 1 tbsp thyme ((softened))
  • 1/2 tsp pepper
  • salt (to taste)
  • 1 oz butter
  • 2 large eggs

Instructions

  1. BasePreheat oven to 180C/355F.In a mixing bowl, place the almond flour.Add the cream cheese and butter and rub into the almond flour until the mixture resembles crumbs.Add the heavy cream and gently mix together.Press into the base of a 9.5in quiche dish.Bake in the oven for 10-12 minutes, until the base is cooked through, but still pale.
  2. Set aside while you make the filling.
