Ingredients
- 1/2 cup almonds
- 1/2 cup macadamia nuts
- 1/4 cup flaxseed
- 2 tbsp unsweetened shredded dried coconut
- 1 2/3 cup almond milk
- 10 drop liquid stevia ((or more, to taste))
- vanilla extract
- 1 dash sea salt
- 1 cup blueberries ((or more, to taste))
Instructions
- Roughly chop the almonds and macadamia nuts, or pulse briefly in a food processor until they resemble coarse oat-like pieces.
- Combine the chopped nuts, flaxseed, and shredded coconut in a medium saucepan.
- Pour in the almond milk and add the sea salt.
- Bring to a gentle simmer over medium heat, stirring frequently, and cook for 5-7 minutes until thickened and creamy.
- Remove from heat and stir in the liquid stevia and a splash of vanilla extract.
- Serve warm in bowls topped with fresh blueberries.
