Ingredients

  • 1/2 cup almonds
  • 1/2 cup macadamia nuts
  • 1/4 cup flaxseed
  • 2 tbsp unsweetened shredded dried coconut
  • 1 2/3 cup almond milk
  • 10 drop liquid stevia ((or more, to taste))
  • vanilla extract
  • 1 dash sea salt
  • 1 cup blueberries ((or more, to taste))

Instructions

  1. Roughly chop the almonds and macadamia nuts, or pulse briefly in a food processor until they resemble coarse oat-like pieces.
  2. Combine the chopped nuts, flaxseed, and shredded coconut in a medium saucepan.
  3. Pour in the almond milk and add the sea salt.
  4. Bring to a gentle simmer over medium heat, stirring frequently, and cook for 5-7 minutes until thickened and creamy.
  5. Remove from heat and stir in the liquid stevia and a splash of vanilla extract.
  6. Serve warm in bowls topped with fresh blueberries.
