Chocolate Mousse {Keto / Low Carb}

Ingredients

  • 1 cup heavy whipping cream
  • 3 1/2 tablespoons cocoa powder
  • 4 tablespoons Swerve Sweetener (confectioners)
  • 1 tablespoon butter (confectioners)
  • 1 tablespoon cream cheese (confectioners)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 1/2 tablespoons Swerve Sweetener (confectioners)
  • 1/4 square chocolate bars (confectioners)

Instructions

  • In a large bowl, beat the heavy whipping cream until it forms stiff peaks.In a separate bowl, beat on medium speed the cocoa powder, Swerve Confectioners, butter, cream cheese, and vanilla until the mixture is smooth.Combine the two bowls and beat with a mixer until everything is combined.
  • Spray an 8 X 8 pan with cooking spray and spread the chocolate mouse layer evenly in the bottom of the pan.For the top layer combine the heavy whipping cream and swerve and beat until stiff peaks form.
  • Spread the homemade whipped cream on top of the chocolate mousse layer.
  • Optional: Grate 1/4 of a square of an unsweetened chocolate bar on top.
  • Refrigerate overnight and enjoy!
