Chicken Bacon Patties

Ingredients

  • 12 oz chicken breasts
  • 4 slice bacon
  • 2 bell pepper ((Medium))
  • 1/4 cup sun-dried tomato pesto
  • 1/4 cup parmesan cheese
  • 1 large eggs
  • 3 tbsp coconut flour

Instructions

  1. Cook the bacon in a skillet until crispy. Remove, let cool, and crumble into small pieces.
  2. Dice the chicken breasts and bell peppers into small pieces.
  3. In a food processor, pulse the chicken until coarsely ground, or finely chop by hand.
  4. In a large bowl, combine the ground chicken, crumbled bacon, diced bell peppers, sun-dried tomato pesto, Parmesan cheese, egg, and coconut flour. Mix well.
  5. Form the mixture into patties about 3 inches in diameter.
  6. Cook the patties in a greased skillet over medium heat for 4-5 minutes per side until golden brown and cooked through.
  7. Serve warm on their own or with a side salad.
