Chicken Bacon Patties

Ingredients
- 12 oz chicken breasts
- 4 slice bacon
- 2 bell pepper ((Medium))
- 1/4 cup sun-dried tomato pesto
- 1/4 cup parmesan cheese
- 1 large eggs
- 3 tbsp coconut flour
Instructions
- Cook the bacon in a skillet until crispy. Remove, let cool, and crumble into small pieces.
- Dice the chicken breasts and bell peppers into small pieces.
- In a food processor, pulse the chicken until coarsely ground, or finely chop by hand.
- In a large bowl, combine the ground chicken, crumbled bacon, diced bell peppers, sun-dried tomato pesto, Parmesan cheese, egg, and coconut flour. Mix well.
- Form the mixture into patties about 3 inches in diameter.
- Cook the patties in a greased skillet over medium heat for 4-5 minutes per side until golden brown and cooked through.
- Serve warm on their own or with a side salad.
