Cheesy Cauliflower Rice

Ingredients

  • 1 head cauliflower ((riced))
  • 75 g cheddar cheese ((riced))
  • 2 oz cream cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp salt ((riced))

Instructions

  1. If not pre-riced, cut the cauliflower into florets and pulse in a food processor until rice-sized.
  2. Place the riced cauliflower in a large skillet over medium heat and cook for 5-7 minutes, stirring occasionally, until tender.
  3. Reduce heat to low and add the cream cheese, stirring until melted and incorporated.
  4. Add the shredded cheddar cheese, garlic powder, and salt. Stir until the cheese is melted and the rice is evenly coated.
  5. Serve hot as a side dish.
