Cheesy Cauliflower Rice

Ingredients
- 1 head cauliflower ((riced))
- 75 g cheddar cheese ((riced))
- 2 oz cream cheese
- 1/4 tsp garlic powder
- 1/4 tsp salt ((riced))
Instructions
- If not pre-riced, cut the cauliflower into florets and pulse in a food processor until rice-sized.
- Place the riced cauliflower in a large skillet over medium heat and cook for 5-7 minutes, stirring occasionally, until tender.
- Reduce heat to low and add the cream cheese, stirring until melted and incorporated.
- Add the shredded cheddar cheese, garlic powder, and salt. Stir until the cheese is melted and the rice is evenly coated.
- Serve hot as a side dish.
