Keto Kung Pao Chicken

Ingredients

  • 1 TBSP sesame oil
  • 4 chicken breasts
  • 1 cup peanuts
  • 4 green onions
  • 8 oz snap peas
  • 4 TBSP B raggs Liquid Aminos (or gluten free soy sauce)
  • 2 TBSP rice vinegar
  • 1 TBSP hoisin sauce
  • 4 tsp grated ginger
  • 1 TBSP chopped garlic
  • 1 TBSP sesame oil
  • optional bib lettce or riced cauliflower

Instructions

  • In a large skillet or wok, heat sesame oil.
  • Add chicken pieces and cook until golden brown.
  • you may need to cook in smaller batches depending on the size of your skillet.
  • While chicken is cooking, mix together the sauce ingredients in a separate bowl.
  • Once all chicken is cooked and golden, add veggies and peanuts.
  • Add the sauce and mix until chicken is well-coated.
  • Cook for a minute or two until vegetables become just slightly tender.
  • Add chili sauce if desired.
  • Serve over a bed of cauliflower rice or lettuce wrap style.
