Ingredients

  • 1/4 cup butter (melted high-quality)
  • 1/4 cup heavy cream (melted high-quality)
  • 1/4 cup coconut flour
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon natural sweetener (melted high-quality)
  • 1/2 teaspoon baking powder
  • 1/4 cup melted butter (melted high-quality)
  • 1/4 cup heavy cream (melted high-quality)
  • 1/4 cup coconut flour
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon natural sweetener (melted high-quality)
  • 1/2 teaspoon baking powder
  • water (/ coconut milk if the batter is too think)
  • peanut butter
  • maple syrup

Instructions

  • Prep 5 minutes Cook 10 minutes Ready in 15 minutes In a medium mixing bowl combine the egg, the melted butter, the heavy whipping cream, the vanilla extract.
  • Stir well for 2 minutes.
  • Combine the coconut flour, the sweetener, the baking powder, the cinnamon.
  • Using a fork combine the wet and dry ingredients.
  • Heat a large non-stick skillet (or use griddle) over medium heat.
  • Spread the batter into 3-inch circles.
  • When bubbles start to appear on the top surface of the pancake, turn over.
  • Cook for 2 minutes on the other side or until lightly browned.
  • Notes
  • Do not over-mix the batter, if you want fluffy pancakes.
