- 1/2 teaspoon vanilla extract

- 1 teaspoon natural sweetener (melted high-quality)
- 1/2 teaspoon baking powder
- 1/4 cup melted butter (melted high-quality)
- 1/4 cup heavy cream (melted high-quality)
- 1/4 cup coconut flour
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 teaspoon natural sweetener (melted high-quality)
- 1/2 teaspoon baking powder
- water (/ coconut milk if the batter is too think)
- peanut butter
- maple syrup
Instructions
- Prep 5 minutes Cook 10 minutes Ready in 15 minutes In a medium mixing bowl combine the egg, the melted butter, the heavy whipping cream, the vanilla extract.
- Stir well for 2 minutes.
- Combine the coconut flour, the sweetener, the baking powder, the cinnamon.
- Using a fork combine the wet and dry ingredients.
- Heat a large non-stick skillet (or use griddle) over medium heat.
- Spread the batter into 3-inch circles.
- When bubbles start to appear on the top surface of the pancake, turn over.
- Cook for 2 minutes on the other side or until lightly browned.
- Notes
- Do not over-mix the batter, if you want fluffy pancakes.
