Quick & Easy Cucumber Radish Salad

Ingredients

  • 3/4 cup paleo mayonnaise ((165 g/ 5.8 oz - you can make your own))
  • 2 tbsp fresh lemon juice ((165 g/ 5.8 oz - you can make your own))
  • 4 tbsp dill ((165 g/ 5.8 oz - you can make your own))
  • 2 tsp coconut vinegar ((165 g/ 5.8 oz - you can make your own))
  • 3 tsp erythritol ((165 g/ 5.8 oz - you can make your own))
  • 3 cucumber (large
  • 200 g radishes ((165 g/ 5.8 oz - you can make your own))
  • 1/2 red onion ((165 g/ 5.8 oz - you can make your own))

Instructions

  1. Prepare the dressing by mixing the lemon juice and mayonnaise.
  2. Season with salt and pepper to taste.
  3. Optionally, add 1-2 teaspoons of vinegar.
  4. Add freshly chopped dill and mix well.
  5. Using the slicing attachment on your food processor or a knife, thinly slice the cucumbers, radishes, ...
  6. and red onion.
  7. Place the sliced vegetables in a mixing bowl.
  8. Pour the prepared dressing over the sliced vegetables.
  9. Mix until well combined.
  10. Serve as a side with meat or fish, as an appetiser, or light dinner.
  11. Eat immediately, or store in the fridge for up to 2 days.
