Keto Stuffed Peppers With Cauliflower Rice

Ingredients

  • 4 bell pepper ((large))
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 cup cauliflower rice
  • 1 tsp salt ((large))
  • 1/2 tsp black pepper ((large))
  • 1 tsp oregano ((large))
  • 2 clove garlic ((large))
  • 1/4 cup chopped onion
  • 1/4 cup tomato sauce

Instructions

  1. Preheat oven to 375F.
  2. Wash peppers, cut off the tops, remove the seeds and reserve the tops.
  3. Season peppers on the inside with salt and pepper.
  4. Set aside.
  5. Cook onion and garlic in olive oil for 2 minutes.
  6. Add ground beef, half of the salt and pepper, oregano and cook for 5 minutes, until the meat is browned.
  7. Add tomato sauce and cauliflower rice.
  8. Add the remaining salt and pepper.
  9. Cook for 2 minutes, stirring frequently.
  10. Taste the mixture.
  11. Add more salt if needed.
  12. Divide stuffing between all 4 peppers.
  13. Place the tops over each pepper.
  14. Cover with foil, bake for 25 minutes.
  15. Uncover and bake for additional 5-10 minutes, until the peppers are soft and fully cooked.
  16. You can remove the tops and add cheese on top of each pepper or serve them as they are.
