Ingredients

  • 125 g red onion ((sliced, approx. ½ onion))
  • 125 g mushrooms ((sliced, approx. ½ onion))
  • 200 g yellow bell pepper ((sliced, approx. ½ onion))
  • 200 g brussels sprouts ((sliced, approx. ½ onion))
  • 1/4 cup palm oil ((sliced, approx. ½ onion))
  • rock salt ((sliced, approx. ½ onion))
  • freshly ground pepper ((sliced, approx. ½ onion))
  • 1 lb ground beef ((sliced, approx. ½ onion))
  • 3 clove garlic ((sliced, approx. ½ onion))
  • 200 g celery ((sliced, approx. ½ onion))
  • 4 cup homemade beef stock ((sliced, approx. ½ onion))
  • 2 cup tomatoes ((sliced, approx. ½ onion))
  • 1 tbsp tomato paste ((sliced, approx. ½ onion))
  • 1 bay leaf
  • 1 tsp dried oregano
  • 1 pinch cayenne pepper ((sliced, approx. ½ onion))
  • 25 g fresh parsley ((sliced, approx. ½ onion))

Instructions

  1. Preheat your oven to 350F.
  2. Place onions, mushrooms, bell pepper, brussels sprouts, palm oil, salt and pepper on a large baking sheet.
  3. Transfer sheet to the oven and roast vegetables for 25-30 minutes.
  4. Once complete, set aside.Add ground beef to a large soup pot and cook on medium-low heat until just cooked through.
  5. Add garlic and celery, cook for another 3 minutes.
  6. Do not drain the fat, keep it in there.Add remaining ingredients: stock, tomatoes, paste and spices.
  7. Bring to a boil, reduce heat to low and simmer for 15-20 minutes.Stir in roasted vegetables and chopped parsley.
  8. Serve with a slice of Flax Focaccia.
