Easy Keto Strawberry Shortcakes

Ingredients
- 3 large eggs
- 3 oz cream cheese
- 1/4 tsp baking powder
- 1/2 tsp vanilla extract
- 2 tbsp erythritol
- 10 strawberries (medium)
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Separate the eggs. In a bowl, beat the cream cheese, egg yolks, baking powder, vanilla extract, and 1 tablespoon of erythritol until smooth.
- In a separate clean bowl, whip the egg whites until stiff peaks form, then gently fold into the yolk mixture.
- Spoon the batter into 4-6 rounds on the prepared baking sheet to form the shortcake bases.
- Bake for 15-18 minutes until golden brown and set. Let cool completely.
- Slice the strawberries and toss with remaining erythritol. Let macerate for 10 minutes.
- Whip the heavy cream until soft peaks form.
- Assemble by placing a shortcake on a plate, topping with whipped cream and macerated strawberries, then adding a second shortcake layer if desired.
