Cranberry Lime No Bake Cheesecake

Ingredients

  • 1 cup coconut ((dried, – unsweetened))
  • 1/2 cup pecans
  • 1/4 cup dried cranberries ((dried, – unsweetened))
  • 1 cup macadamia nuts ((dried, – unsweetened))
  • 2 lime (regular
  • 4 oz cream cheese
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 10 drop liquid stevia

Instructions

  1. In a food processor, pulse the dried coconut, pecans, macadamia nuts, and dried cranberries until finely ground and starting to stick together.
  2. Press the nut mixture firmly into the bottom of a lined 8-inch springform pan or pie dish to form a crust. Refrigerate while making the filling.
  3. Melt the coconut oil and let it cool slightly.
  4. In a bowl, beat the cream cheese until smooth. Add the melted coconut oil, vanilla extract, stevia, and the juice and zest of both limes.
  5. Beat until the filling is smooth and creamy.
  6. Pour the filling over the chilled crust and spread evenly.
  7. Freeze for at least 3 hours until firm. Let sit at room temperature for 10 minutes before slicing and serving.
