Cauliflower Mexican Rice (Paleo, Vegan, Keto, Whole30)

Ingredients

  • 1 head cauliflower
  • 1 tbsp coconut oil
  • 1/2 medium onion ((diced))
  • 2 garlic cloves ((diced))
  • 1 tsp chili powder
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/2 cup tomato sauce
  • 1 tbsp lime juice ((diced))

Instructions

  1. Remove the leaves off the cauliflower and cut off the florets from the roots.
  2. Use a cheese grater or a food processor with a grater attachment, and grate the cauliflower into the size of rice.
  3. Set aside.
  4. Heat coconut oil in a large skillet over medium high heat.
  5. Add diced onion and cook stirring for 4-5 minutes until translucent.
  6. Add garlic and cook stirring for 1 minute.
  7. Add the cauliflower rice, chili powder, sea salt, and black pepper, and stir together.
  8. Add tomato sauce and sauté for about 5 minutes, while stirring frequently.
  9. If using, add in cilantro and lime juice.
  10. Serve warm.
