2 Minute Red Enchilada Sauce – Low Carb Keto|Grain Free|Gluten Free

Ingredients

  • 1/4 cup tomato sauce (El Pato Hot Style, —or plain no-sugar-added Hunt's Tomato Sauce)
  • 1/4 cup Walden Farms Ketchup
  • 1/2 cup water
  • 2 tablespoons unsalted butter
  • 2 dashes worchestershire
  • 1/2 teaspoon hot sauce (El Pato Hot Style, —or plain no-sugar-added Hunt's Tomato Sauce)
  • 1 1/2 tablespoons chili powder
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon onion powder
  • 3/4 teaspoon ground cumin
  • 1/8 teaspoon ground coriander
  • 1/8 teaspoon cayenne
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper (El Pato Hot Style, —or plain no-sugar-added Hunt's Tomato Sauce)
  • 1 pinch dried thyme leaves
  • 1 pinch dried leaves oregano
  • 1/4 teaspoon xanthan gum

Instructions

  • Combine all ingredients in a microwave safe bowl.
  • Stir until well combined.
  • Cover and nuke 1 minute on high.
  • Stir.
  • Cover and nuke 30 seconds.
  • Stir, scraping down the sides, well.
  • Nuke another 30 seconds.
  • Remove from microwave, stir and is the sauce too thin? If so, dust in the xanthan gum and stir like crazy to prevent clumping.
  • Sauce should thicken up, perfectly.
  • Ole! Enjoy! Store in an airtight container up to a week or freeze up to 3 months.
