Keto Coffee Cake

Ingredients

  • 4 cups almond flour
  • 11 tablespoons butter
  • 2/3 cup unsweetened almond milk
  • 1 1/3 cups erythritol (powdered)
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon liquid stevia
  • 1 teaspoon cinnamon
  • 1 dash salt
  • 8 ounces cream cheese
  • 1/4 cup unsweetened almond milk (powdered)
  • 1 teaspoon liquid stevia
  • 8 tablespoons butter
  • 1/4 cup erythritol
  • 1 teaspoon stevia
  • 1 teaspoon vanilla
  • 3 teaspoons cinnamon

Instructions

  • For The Cake: Preheat oven to 350 Mix all ingredients together in a large mixing bowl until well combined Grease a bundt pan with coconut oil Cook for 50 – 60 minutes until golden brown (clean toothpick test) Allow to cool completely before removing from pan.
  • For Cream Cheese Glaze: Allow cream cheese to get to room temperature Mix all ingredients together and pour over cake (once cooled) For Cinnamon Glaze: In a saucepan mix all ingredients until melted (the butter and the cinnamon sugar mixture will separate) Once the glaze is ready use a spoon over cream cheese to decorate your coffee cake with cinnamon glaze.
  • It will be more like a goo than a glaze, but it is delicious Drizzle butter from glaze over cake lightly.
