Green Omelette

Ingredients

  • 2 whole eggs
  • 1/2 cup spinach
  • 1/2 avocado (sliced)
  • 1/2 teaspoon turmeric
  • 1 teaspoon coconut oil

Instructions

  • Crack the eggs into a blender.
  • Drop a handful of spinach in and add the turmeric.
  • Blend everything until the mixture is smooth.
  • Set a frying pan over medium heat and pour in some coconut oil.
  • When the oil is heated, fry the egg mixture for 2-3 minutes.
  • Flip the egg and fry for another 1-2 minutes.Set the omelette in a plate.
  • Put some sliced avocado and a couple of spinach in one side, then fold the other side on top of the avocado and spinach filling.
  • Enjoy!
