Crack the eggs into a blender.
Drop a handful of spinach in and add the turmeric.
Blend everything until the mixture is smooth.
Set a frying pan over medium heat and pour in some coconut oil.
When the oil is heated, fry the egg mixture for 2-3 minutes.
Flip the egg and fry for another 1-2 minutes.Set the omelette in a plate.
Put some sliced avocado and a couple of spinach in one side, then fold the other side on top of the avocado and spinach filling.
