Gluten Free, Keto-Friendly Low Carb Waffle

Ingredients

  • 1/2 cup almond butter (Pecan Pie, room temperature)
  • 4 large eggs
  • 2 tablespoons melted butter (Pecan Pie, room temperature)
  • 1/4 cup almond flour
  • 1 tablespoon sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Instructions

  • Stir together the first three ingredients until smooth.
  • Add the other ingredients.
  • Mix well.
  • Grease your waffle iron and add about 1/3 – 1/2 cup of batter.
  • Cook until deep golden brown.
  • Repeat.
  • Serve with additional Pecan Pie Almond Butter, toasted pecans, butter, and/or sugar free syrup.
  • (Makes 3-4 waffles depending on the size of your waffle iron.)

  • I have a small 2-plate waffle maker, and I used less batter per waffle (1/4 – 1/3).
