In a pan at medium heat, add cooking oil and heat it up.
Add the onion and fry until they start to turn golden brown.
Add the garlic and fry for a further minute the add the tomatoes.
Leave it cook to a sauce for about 4 to 5 minutes.
Add on the pulled pork, stir and mix well then add the rest of spices and seasonings.
Mix well and then add the stock, and bring to a simmer.
Add the coconut milk, stir and leave it to simmer.
Leave it cook and reduce down until the sauce is to your liking.
Serve over your vegetables or mash of your choice
