Keto Chicken Satay Skewers

Ingredients

  • 1 pound boneless chicken (order here)
  • 3 tablespoons soy sauce (order here)
  • 1 tablespoon fish sauce (order here)
  • 1/2 cup coconut milk (order here)
  • 1/2 teaspoon garlic powder (order here)
  • 2 tablespoons avocado oil (order here)
  • 1/2 cup peanut butter (order here)
  • 1/2 cup coconut milk (order here)
  • 1/4 cup water
  • 2 tablespoons tamari soy sauce (order here)
  • 1 teaspoon fish sauce (order here)
  • 1 teaspoon minced garlic
  • 1/4 teaspoon cayenne pepper (order here)
  • 1 tablespoon lemon juice (order here)
  • 1 bunch cilantro (order here)

Instructions

  • Cut up the chicken into tenders and place in a large bowl.
  • Add the marinade ingredients besides the avocado oil and stir to coat the chicken.
  • Let the mixture sit for a while and prepare the peanut sauce.
  • Mix all the sauce ingredients until smooth and put into ramekins.
  • Put the chicken on wood or metal skewers.
  • Heat up a grill pan or cast iron skillet over medium high heat and avocado oil in the pan.
  • Tilt the pan to coat it.
  • Add the chicken skewers and cook for 3-4 minutes on each side.
  • Place the cooked skewers on a platter with satay sauce ramekins, cover with cilantro and serve.
