Quick & Easy Cucumber Radish Salad

Ingredients

  • 3/4 cup paleo mayonnaise (165 g/ 5.8 oz - you can make your own)
  • 2 tablespoons fresh lemon juice (165 g/ 5.8 oz - you can make your own)
  • 4 tablespoons dill (165 g/ 5.8 oz - you can make your own)
  • 2 teaspoons coconut vinegar (165 g/ 5.8 oz - you can make your own)
  • 3 teaspoons erythritol (165 g/ 5.8 oz - you can make your own)
  • 3 cucumber (large
  • 200 grams radishes (165 g/ 5.8 oz - you can make your own)
  • 1/2 red onion (165 g/ 5.8 oz - you can make your own)

Instructions

  • Prepare the dressing by mixing the lemon juice and mayonnaise.
  • Season with salt and pepper to taste.
  • Optionally, add 1-2 teaspoons of vinegar.
  • Add freshly chopped dill and mix well.
  • Using the slicing attachment on your food processor or a knife, thinly slice the cucumbers, radishes, ...
  • ...
  • and red onion.
  • Place the sliced vegetables in a mixing bowl.
  • Pour the prepared dressing over the sliced vegetables.
  • Mix until well combined.
  • Serve as a side with meat or fish, as an appetiser, or light dinner.
  • Eat immediately, or store in the fridge for up to 2 days.
