Cheesy Chicken Stuffed Eggplant

Ingredients

  • 2 eggplant (medium
  • 2 teaspoons garlic (medium, sliced in half lengthwise.)
  • 4 tablespoons olive oil
  • 6 chicken breasts (medium, sliced in half lengthwise.)
  • 1/2 container grape tomatoes (medium, sliced in half lengthwise.)
  • 1/2 package cheddar cheese (medium, sliced in half lengthwise.)
  • 4 tablespoons scallions (medium, sliced in half lengthwise.)

Instructions

  • Pre Heat oven to 400 °Place sliced eggplant on a lined ,rimmed cookie sheetSprinkle each with minced garlicDrizzle eggplant with olive oil and add salt and pepperPlace in oven for 25- 30 minutesRemove from oven add shredded chicken, cheese, and tomatoesReturn to oven for 10 minutes until cheese is melted.
