Keto Chocolate Coconut Macaroon Cookies

Ingredients

  • 1 cup almond flour
  • 3 tablespoons coconut flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/3 cup erythritol
  • 1/3 cup unsweetened shredded dried coconut
  • 1/4 teaspoon salt
  • 2 large eggs (room temperature)
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F. Mix together all dry ingredients.
  • Add wet ingredients and mix together again. Roll out balls with hand and place on a silpat lined baking sheet. Bake for 15-20 minutes.
