Low Carb Pork Coconut Curry

Ingredients

  • 2 pounds pork butt
  • 1 teaspoon cumin (ground)
  • 1 teaspoon coriander (ground)
  • 1/2 teaspoon cinnamon (ground)
  • 1/2 teaspoon chili powder
  • 2 tablespoons coconut oil
  • 1 onions (medium
  • 3 cloves garlic (ground)
  • 1 inch ginger (ground)
  • 14 ounces coconut cream
  • 1 lime zest (ground)
  • 1/2 teaspoon salt
  • 1/2 pound green beans (ground)

Instructions

  • Place the diced pork into a mixing bowl and add the cumin, coriander, cinnamon and chili powder.Mix well and allow the pork to marinate for at least 2 hours, or overnight for best results.Place a large saucepan over medium heat and add the coconut oil, onion, garlic and ginger.
  • Saute for 5 minutes until fragrant.Add the marinated pork and cook for 5-7 minutes until evenly colored.Pour over the coconut cream and bring to a simmer.Simmer for 60-80 minutes, until the pork is tender.Add the lime juice, salt and green beans and cook for another 5 minutes.Serve and enjoy.
