Low Carb Mexican Pizza - Keto, Gluten Free
- 1/2 pound ground beef (85% lean)
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon yellow onion (85% lean)
- 1 clove garlic (85% lean)
- 2 ounces cream cheese (85% lean)
- 6 ounces mozzarella cheese (85% lean)
- 1 cup shredded cheddar cheese (85% lean)
- 3/4 cup almond flour
- 2 tablespoons green pepper (85% lean)
- 1/4 cup taco sauce (85% lean)
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon green onions (85% lean)
- 1/2 tablespoon chili powder
- 1/2 tablespoon cumin
- 1/2 tablespoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon oregano
- 1/4 teaspoon coriander
- 1/4 teaspoon cayenne pepper
- Preheat oven to 400 degrees.
- Mix all spices together and set aside.
- This will serve as your seasoning for the ground beef.
- -Heat 1 tbsp olive oil in a skillet over medium high heat.
- Add onions and garlic and cook for 1-2 minutes until fragrant, taking care not to burn.
- Add ground beef to the pan and cook until all pink is removed from the meat, 4-5 minutes.
- While the meat is cooking, stir in the spice mixture so that it coats the beef.
- -To prepare the dough, placed the shredded mozzarella cheese in a microwave safe dish and cook on medium power for one minute, until the cheese is melted.
- Add the almond flour, softened cream cheese and egg.
- Season with salt and pepper.
- Stir to combine thoroughly.
- -Rub your hands with a bit of olive oil so they don’t stick to the dough, and flatten the dough onto a parchment paper lined baking sheet.
- Drizzle with 1 tbsp olive oil.
- Bake for 10 minutes, or until edges begin to brown.
- -Remove baked crust from oven.
- Top with taco sauce, leaving 1/2 inch around the edges without sauce.
- Sprinkle the seasoned ground beef across the pizza.
- Top with green pepper and sprinkle with cheddar cheese to evenly coat the top of the pizza.
- Return to oven for 6 minutes, until cheese is bubbling.
- Sprinkle with green onion and cilantro.
- Serve and enjoy!
