Low Carb Mexican Pizza - Keto, Gluten Free

Ingredients

  • 1/2 pound ground beef (85% lean)
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon yellow onion (85% lean)
  • 1 clove garlic (85% lean)
  • 2 ounces cream cheese (85% lean)
  • 6 ounces mozzarella cheese (85% lean)
  • 1 cup shredded cheddar cheese (85% lean)
  • 3/4 cup almond flour
  • 2 tablespoons green pepper (85% lean)
  • 1/4 cup taco sauce (85% lean)
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon green onions (85% lean)
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon cumin
  • 1/2 tablespoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon coriander
  • 1/4 teaspoon cayenne pepper

Instructions

  • Preheat oven to 400 degrees.
  • Mix all spices together and set aside.
  • This will serve as your seasoning for the ground beef.
  • -Heat 1 tbsp olive oil in a skillet over medium high heat.
  • Add onions and garlic and cook for 1-2 minutes until fragrant, taking care not to burn.
  • Add ground beef to the pan and cook until all pink is removed from the meat, 4-5 minutes.
  • While the meat is cooking, stir in the spice mixture so that it coats the beef.
  • -To prepare the dough, placed the shredded mozzarella cheese in a microwave safe dish and cook on medium power for one minute, until the cheese is melted.
  • Add the almond flour, softened cream cheese and egg.
  • Season with salt and pepper.
  • Stir to combine thoroughly.
  • -Rub your hands with a bit of olive oil so they don’t stick to the dough, and flatten the dough onto a parchment paper lined baking sheet.
  • Drizzle with 1 tbsp olive oil.
  • Bake for 10 minutes, or until edges begin to brown.
  • -Remove baked crust from oven.
  • Top with taco sauce, leaving 1/2 inch around the edges without sauce.
  • Sprinkle the seasoned ground beef across the pizza.
  • Top with green pepper and sprinkle with cheddar cheese to evenly coat the top of the pizza.
  • Return to oven for 6 minutes, until cheese is bubbling.
  • Sprinkle with green onion and cilantro.
  • Serve and enjoy!
