Gluten Free, Keto-Friendly Low Carb Waffle

Ingredients

  • 1/2 cup almond butter ((Pecan Pie, room temperature))
  • 4 large eggs
  • 2 tbsp melted butter ((Pecan Pie, room temperature))
  • 1/4 cup almond flour
  • 1 tbsp sweetener
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp salt

Instructions

  1. Stir together the first three ingredients until smooth.
  2. Add the other ingredients.
  3. Mix well.
  4. Grease your waffle iron and add about 1/3 – 1/2 cup of batter.
  5. Cook until deep golden brown.
  6. Repeat.
  7. Serve with additional Pecan Pie Almond Butter, toasted pecans, butter, and/or sugar free syrup.
  8. (Makes 3-4 waffles depending on the size of your waffle iron.)
  9. ^ Those were the original directions on the recipe card.
  10. I have a small 2-plate waffle maker, and I used less batter per waffle (1/4 – 1/3).
