Ingredients
- 2 medium zucchini
- 1 cup almond flour
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup grated Parmesan cheese
- 1 cup avocado oil (for frying)
Instructions
- Wash and slice the zucchini into thin rounds, about 1/4 inch thick.
- In a mixing bowl, whisk together the eggs.
- In another shallow dish, combine the almond flour, garlic powder, onion powder, paprika, salt, black pepper, and grated Parmesan cheese.
- Dip each zucchini slice into the egg mixture, allowing excess to drip off.
- Coat each zucchini slice with the almond flour mixture, pressing gently to adhere.
- Heat the avocado oil in a large skillet over medium heat until hot.
- Fry the zucchini slices in batches for about 2-3 minutes on each side, until golden brown and crispy.
- Transfer the fried zucchini to a plate lined with paper towels to absorb excess oil.
- Serve immediately as a snack or side dish.
