Ingredients

  • 2 medium zucchini
  • 1 cup almond flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup grated Parmesan cheese
  • 1 cup avocado oil (for frying)

Instructions

  1. Wash and slice the zucchini into thin rounds, about 1/4 inch thick.
  2. In a mixing bowl, whisk together the eggs.
  3. In another shallow dish, combine the almond flour, garlic powder, onion powder, paprika, salt, black pepper, and grated Parmesan cheese.
  4. Dip each zucchini slice into the egg mixture, allowing excess to drip off.
  5. Coat each zucchini slice with the almond flour mixture, pressing gently to adhere.
  6. Heat the avocado oil in a large skillet over medium heat until hot.
  7. Fry the zucchini slices in batches for about 2-3 minutes on each side, until golden brown and crispy.
  8. Transfer the fried zucchini to a plate lined with paper towels to absorb excess oil.
  9. Serve immediately as a snack or side dish.
