Easy Keto Shrimp Scampi – Low Carb & Paleo

Ingredients
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 tablespoon garlic (minced)
- 1/2 cup dry white wine (minced)
- 1/2 teaspoon kosher salt (minced)
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon red pepper flakes (minced)
- 2 pounds extra large shrimp (minced)
- 1/3 cup fresh parsley (minced)
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 3 cups spaghetti squash (minced)
Instructions
- Heat the butter and oil in a large saute pan.Add the garlic and cook for 2 – 3 minutes until fragrant.Add the wine, salt, black pepper, red pepper and cook for 2 minutes.Add the shrimp and cook 2 – 3 minutes or until opaque.Remove from the heat and stir in the parsley, lemon juice, and lemon zest.Serve over hot, cooked spaghetti squash.Garnish with parmesan cheese if desired (optional)
